In 2022, librarian Lizzie Todd and the team from Crosby library built two smokers out of old library furniture: a hot smoker from an old metal cupboard, and a cold smoker from a filing cabinet. We now had a way to smoke food in the library - a library smokery! .

This collaboration with Lizzie was one of our favourite moments. The librarians we work with have a huge variety of skills and interests. By sharing her expertise in smoking food, Lizzie taught us all a new skill, and contributed a whole new set of flavour possibilities to our cooking.

We also now have portable cold smokers in Bootle library, which we use regularly to smoke herbs, spices and salt to add to our lunches

You will need

Tomatoes
Nice bread
Olive oil
Garlic clove, cut in half (smoked or not, you decide)
Salt to taste
Basil leaves
Smoked mozzarella (optional)

How to make it

Cut an x shape in the top of half of your tomatoes
Hot smoke these for 3-4 hours until soft
When tomatoes are ready, slice as best you can into segments
Now dice the remaining (non-smoked) tomatoes
In a bowl, mix your tomatoes, salt, basil leaves and a glug of olive oil
Toast some bread. When done, drizzle with oil and rub each slice with the garlic clove
Top each slice of toast with the tomato mixture
Add a slice of smoked mozzarella if you'd like!
