Recipe for Dandelion Fritters

This recipe was developed during lockdown, when we were trying to figure out how to continue Chopping Club without cooking together in person.  In May 2020, before we were brave enough to run live workshops on Zoom, we shared ideas and recipes about dandelions with our audience, via facebook live and a powerpoint presentation. Dandelions, growing up through pavement cracks felt like a slight, bright symbol of hope, at least to me. They are also very easy to identify, and have no poisonous lookalikes, so we felt confident sending people out into their yards to pick them. Rachel Pimm was a guest artist this month, and they shared research, picking tips and a recipe. These fritters are genuinely delicious.  

You will need

  • 1 Egg
  • 250ml (millilitres) Any milk
  • 125g (grams) Any flour
  • 1tsp (teaspoons) Baking powder
  • Plenty of oil for frying
  • 2tsp (teaspoons) Sugar (if sweet)
  • 1tsp (teaspoons) Cinnamon (if sweet)
  • Salt, pepper, spices or herbs (if savoury)
  • If sweet: granulated sugar to roll hot fritters in
  • If savoury: a dipping sauce - eg soy sauce + sesame oil + pinch sugar...Or mayo!

How to make it

  1. Pre-heat around 5cm oil in a saucepan or wok. If oil starts smoking turn it down, it’s too hot. You can check that the temperature is right by test- frying a small blob of batter - you want it to sink down about halfway in the oil and then immediately float up to the top. If it sinks to the bottom your oil is too cold. If it rises to the surface straight away - too hot.
  2. In a bowl, whisk all ingredients except flowers together, including any add ins (see ingredients list)
  3. Dip the flowers in the batter 4-5 at a time
  4. Fry in batches. Fry flower side down, then flip over - it should only take a minute on each side for them to puff up, crispy and golden.
  5. Drain on kitchen paper or a clean tea towel and, if they are sweet, whilst hot, dip in your coating of choice.
